In the Qu’Appelle Valley in Saskatchewan, is a seemingly endless field of Canola. The breeze sweeps along the lush crop of Canola reflecting bright colors of green and yellow.
The open field of the Canola crop sits under a bright blue sky filled with soft white puffy clouds that hang low on the horizon. Canola was introduced in the 1970’s in Canada because of its lower levels of erucic acid which is found in traditional rapeseed oils.
The word canola came from Canadian oil and low acid. Originally a specialty crop in Canada is now also produced in the United States. Canola oil is beneficial with the omega-3 fatty acid and is considered the healthiest of the cooking oils.
